Chicken Enchiladas

I don't remember where I found this recipe, I had it saved on my computer, so my apologies to whoever gave it to me. Now don't laugh, but this is the first time I've made enchiladas. Sad I know, but I'm slowly moving up in the world. ;) I had actually invited a friend and her little girl over to eat with us and thought something other than pancakes or macaroni and cheese, would be more appropriate. (I really need to stop trying out new recipes when I invite people over, who knows how my cooking will turn out lol!) They took a little bit of time, but it was well worth it. Thankfully, they turned out to be delicious! And now, I have no problem making enchiladas. Go me. :)

If you try the recipe, I hope you like it as much as we did!

Chicken Enchiladas

1 or 2 cups cooked rice
1 can enchilada sauce
1 green pepper
1 pt sour cream
2 cans cream of chicken soup
shredded cheese
2 or 3 chicken breasts, shredded (or hamburger - which is what I had on hand)
1 can refried beans

In large bowl mix the green chilies, sour cream, and cream of chicken soup together. Dip one side of the tortillas in the enchilada sauce. (Be sure and put some enchilada sauce in bottom of pan so they don’t stick). Put a small amount of sour cream mixture into the center of tortilla. Place the rest of the ingredients into the tortilla. Roll and put in pan. Continue until pan is full. Then pour the rest of sour cream mixture on the top. Cover with cheese and enchilada sauce. Put foil over and bake at 350ยบ until hot in middle.

You would have never made it in our family without making enchiladas by now! It's actually James' favorite meal that I make. I'll have to try this recipe, and change it up a bit!

Those sound yummy! I have a super easy chicken enchilada recipe you might also like. I got it off the Old ElPaso green enchilada sauce can (ha).

You just chop up about a pound of chicken breat, cook in a little oil in the skillet, add 8oz. cream cheese and a small can of green chiles and simmer for a few minutes. Then you spray a casserole dish with Pam, put the chicken mixture in tortillas, roll them up, and pour two cans of green enchilada sauce over the top. Then you sprinkle everything with cheddar cheese.

I'm always trying to find chicken recipes, and this one's pretty darn easy!
