Crepe Recipe

My friend Cami gave me this yummy crepe recipe. A small tub of Cool Whip and one can of raspberry pie filling was plenty for two batches. I don't have a crepe maker but a skillet worked just fine. Now I won't have to go out, to eat yummy crepes, I can make them at home! Thanks Cami!

CREPES

In a bowl combine 2 beaten eggs, 1 1/2 cups milk, 1 cup all-purpose flour, 1 tablespoon cooking oil, and 1/4 teaspoon salt. Beat until well combined.

Heat a lightly greased 6-inch skillet (or use a crepemaker); remove from heat. Spoon in 2 Tablespoons batter; lift and tilt skillet to spread batter into a circle.

Return to heat; brown on 1 side only. (I browned both sides.) Invert over paper towls; remove crepe. Repeat with remaining batter, greasing occasionally.

Makes: 18 crepes
Nutrition Facts per crepe: 50 cal. 2 g total fat (1 g sat. fat). 25 mg chol. 50 mg sodium, 6 g carbo. 0 g fiber. 2 g pro.
Daily Values: 2% vit. A. 3% calcium, 2% iron

Mmm, crepes are so yummy! I haven't made them in a long time though. Too bad I don't have any pie filling or whipped cream or I'd be making some now :D

Glad you liked it I actually like to heat up cream cheese in the and add powdered sugar to it, and use that as the filling, and then put melted frozen berries on top for the sauce. MMMM..sounds SO GOOD!
