Creamy chicken and broccoli

My SIL gave me this recipe and it's pretty tasty. I believe she found it in one of her Weight Watchers books. It's not a recipe I would have everyday, but once in awhile it's fine. Let me know if you try it!


Creamy Chicken and Broccoli

1 10-3/4 oz 90%fat free Cream of Chicken soup

¼ Cup fat-free sour cream

1 10oz package frozen broccoli spears

Cooking spray

1 pound chicken breast tenders

½ cup shredded reduced-fat cheddar cheese

  1. combine soup and sour cream in a medium bowl, stirring well.
  2. Place broccoli in a colander; run under cold water 30 to 45 seconds or until spears are separated and partially thawed. Drain on paper towels
  3. heat a large nonstick skillet over medium-high heat; coat pan with cooking spray. Place chicken and broccoli in pan. Spoon soup mixture over chicken and broccoli. Bring to a boil. Cover, reduce heat to medium, and simmer 12 minutes or until chicken is done. Remove from heat; sprinkle with cheese. Cover and let stand 3 minutes.

Yield: 4 serving (1 cup) 5 points
